Creamy Mashed Potatoes

Only for people who like really rich, creamy mashed potatoes. More of a method than a recipe.

Ingredients

  • Potatoes, peeled: about 1/4 lb per person
  • Heavy cream
  • Butter
  • Plenty of salt

Directions

  1. Boil the peeled potatoes until very well cooked and breaking apart easily, then drain.
  2. Whip slowly with an electric mixer. Don't whip fast or you'll end up with glue.
  3. Add heavy cream until the potatoes start to look creamy, then add small chunks of butter until the flavor is to your liking.
  4. Finish with plenty of salt and enough cream to make them as creamy as you like.

To quote Alton Brown, great mashed potatoes hate recipes. I lost my exact measurements years ago, but this is the general idea. — Nathan
