Spicy Chicken, Baked

Boneless chicken breasts with a paprika-cayenne rub, baked then finished under the broiler. Serve with blue cheese dressing.

Ingredients

  • 2 tablespoons kosher salt
  • 2 tablespoons Hungarian paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon cayenne pepper
  • Bread crumbs or flour, for dredging
  • 4 boneless, skinless chicken breasts
  • Your favorite oil, for brushing

Directions

  1. Mix the salt, paprika, garlic powder and cayenne to make the rub.
  2. Liberally coat the chicken with the rub and massage it in. Dredge with bread crumbs.
  3. Place the chicken on a baking sheet in a preheated 350-degree oven for 15 minutes.
  4. Remove and lightly coat the chicken with oil. Turn on the broiler and broil for 5 more minutes, watching so it doesn't burn. It's done when golden brown.
